Z is for Zucchini

I am excited to share with you a simple, veggie recipe that is good and good for you!
We call it Zucchini pizza. Zucchini's are good for the eyes, the bones, and helps with Asthma. It can be a side item or large part of your meal, it is up to you. The recipe is also very forgiving so you can adapt to fit your taste.



This is a simple Zucchini recipe, but it can look super impressive depending on how you serve it up. Lets get started!



You will need:
Zucchini (For this I used 2)
Mushrooms ( I used 8 whole white mushrooms)
Onion (half of a medium/large )
Garlic (3-4 cloves)
Olive Oil
Salt/Pepper to taste
and Shredded Cheese
Preheat oven 350.




Step 1: Wash the Zucchini and cut it half down the length of the Zucchini.

Step 2: Take out the inside of the Zucchini

and cut it into little cubes and set aside

take the shell of the Zucchini and Place it in a pan, put in the oven for about 5 minutes uncovered.

Step 3: Cut the Garlic, Mushrooms, and Onions ( Don't forget to take out the Zucchini Shells)

Step 4: put a little olive oil in a pan with onions and garlic; cook till onions soften; add mushrooms and half of the Zucchini pieces; and cook till mushrooms are slightly darkened and tender. add salt and pepper to taste.

Step 5: Spoon the mixture into the Zucchini shell.
Add some cheese on top.

Put in the oven for about 6 minutes till cheese melts

 then Broil for about 2-3 minutes if you like. This is how it looks  broiled. Brings out the flavor of the cheese.

Now what to do with the other half of Zucchini?
Glad you asked.
You will make a nice creamy sauce and serve over some pasta.
The sauce is made similar to the above recipe with a few modifications, you will have to chop a few more mushrooms, garlic and onions. You will also need to add Basil, Parsley and Thyme. To make the sauce start with a little butter, garlic, basil, parsley, thyme and onions. Cook till tender. Add cream cheese and stir till it melts.Add salt and pepper to taste. Add Zucchini and mushrooms, and cook till  tender, slowly stir in about 1/4 cup of milk. If it is too runny add some Parmesan cheese or the shredded mozzarella cheese. It will thicken when extra cheese is added. Stir till everything is melted. serve hot over some pasta! Enjoy!



For those of you wondering O how fattening is that!? 
Well, here is my theory....First, portion control. ^_^
Second, when something is satisfying to the tongue  there is no need to overfill the belly. Often people over eat because what they are eating has no flavor, sustenance or nutritional value. So they keep eating and eating till it hits the spot. Not this recipe! It will hit the spot the first time every time. Hope you guys enjoy it!

Oh I see! Do you have to use a broiling pan, or can you just set the oven to "broil"...?
